The Veggie Benedict is a wonderful riff on the classic dish, using Portobello mushroom instead of ham and then adding spinach, a poached egg, and hollandaise sauce.

If you want a little southwest flavor, try the breakfast burritos. Imagine two flour tortillas stuffed with all your favorites and topped with salsa, bell peppers, and served with bacon or sausage.
